How to Wash Dishes in a 3-Compartment Sink
Scrape/Rinse/Soak
Wash (1st sink)
*Water must be 110*F
Rinse (2nd sink)
*Spray or submerge
Sanitize (3rd sink)
*Heat sanitizing: Water must be 171*F
*Chemical sanitizing: Chorine, iodine, or quaternary ammonium (quats)
*Submerge dishes for 30 seconds
Air-dry
*Do NOT rinse dishes again after sanitizing!*
