Here are the Core Ideas in the Health Education Standards from OSPI, Office of Superintendent of Public Instruction, Washington state:
Wellness
Safety
Nutrition
Sexual Health
Social Emotional Health
Substance Use and Abuse
You could put together your own plan of study using a variety of individual resources, such as books, articles, websites, field trips, model building, volunteer opportunities, and more. For example, learning about nutrition could incorporate healthy meal planning & cooking, a CPR class would make a great hands-on safety activity for high schoolers, and there are resources such as You Can (Marijuana Can't) for information on substance abuse.
