1 egg
1 c. flour
1 c. buttermilk
2 tbsp brown sugar
2 tbsp oil
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
¼ tsp cinnamon
¼ tsp vanilla
First, crack the egg into a bowl and beat with a fork. Add in remaining ingredients and beat with a fork until smooth.
Put a frying pan on the burner and turn on medium. Place a nickel sized puddle of oil on the pan and coat bottom. Once the pan is warmed, scoop in pancake mix. Let cook until the pancake rises, check the corners of the pancake for color before flipping. Flip, repeat on the second side.
