I work at Food Services for Sanford Hospitals. Specifically, I am a nutrition assistant at the call center in Fargo, ND. My job duties include taking patient meal orders over the phone and running reports to the different hospitals. This position requires strong communication and multitasking skills. Since I am taking patient's orders, this job requires an understanding of different types of diets such as renal, diabetic, low potassium, etc. I also receive specific meal orders via fax to enter for the behavioral health unit. I also will receive snack orders for various hospitals and enter them into our Room Service Choice system from CBORD. Another task that I check is tube feedings. When I work a specific shift, I will cross reference tube feeding orders from EPIC with CBORD to ensure all tube feedings have the correct amount being sent per the goal rate for their enteral nutrition.
In the Fall of 2019, I attended the Food and Nutrition Conference and Expo in Philadelphia, PA. I took part in the conference meet and greet as well as the Internship Fair where I was introduced to many different registered dietitians and aspiring dietitians. I had insightful conversations about the different opportunities the field of dietetics possesses. There were many sessions at FNCE that intrigued me, but I couldn't attend them all. I was able to expand my education on eating disorders and also on school foodservice. I had not planned to go to a session on school lunches, but I am happy I had because it made me become curious and excited about this branch of nutrition and dietetics.

I presented twice at Concordia's Celebration of Student Scholarship. My first presentation was on my Ecology research titled "Algae Cell Distribution in Long Lake, Minnesota" in 2018. My second presentation was in 2019 titled "Nutrient Needs of Food Pantry Clients".
