The Cobber Food Pantry is a recent addition to Concordia's campus. They receive donations from campus employees and students, but also goods from the Great Plains Food Bank. On the first Friday of each month, a large shipment from the food bank is delivered and will be brought into the food pantry space, unpacked, and organized. I have had the opportunity to take part in the restocking of the food pantry.
In the summer of 2020, I had the opportunity to engage in a 40-hour clinical rotation at the Tri-Country Health Care Hospital in Wadena, MN. Due to COVID-19, there was a low in-patient census, limiting the chance to observe what a typical Registered Dietitian's day looks like. Even so, I was able to observe many different facets of a clinical RDs job. I observed patient interviews, witnessed multiple diabetes educations, and attended daily interdisciplinary rounds each day.
SAND has been a valuable organization to be a part of. Through this group, I have had the opportunity to hear from a variety of Registered Dietitians and their chosen paths. I have been a member since 2018 and am the residing student treasurer of SAND for the 2020 term.
Throughout my first 4 years at Concordia, I was a student worker for campus events and set up. From 2019-2020 I was a student manager who communicated and collaborated with a team of 15 students to set up events on campus. Along with setups, I also collaborated with my supervisors to organize the student work schedule.
I volunteered at the local food bank with fellow SAND members. We helped take bulk items and repackage them into smaller quantities.
Collaborated with fellow volunteers and Concordia's dining services to transport hot and cold meals to the program's local clients.
Concordia's Taste Not Waste Campaign began in 2016 and its goal is to eliminate plate waste by 50% by the year 2020. In 2018 I contributed to this campaign by scraping plates and weighing the scraps to determine food waste.
