February – Cabbage
The Friday before (1/26/18): Cabbage is our garden fresh vegetable this month. It comes in varieties like green, purple, and white. Did you know that cabbage is related to broccoli? Cabbage is high in nutrients and fiber. Fiber helps keep you full until the end of the day. Kiddos should try to have 19-26 grams of fiber each day. Look at nutrition facts labels to see how much fiber you are getting in one day, and don’t forget to include cabbage as a source of fiber.
The Monday of (1/29/18): Happy Monday! Cabbage is our garden fresh vegetable for this month. It is a staple ingredient in Asian dishes. Take notice of it in Asian foods like egg rolls or stir-fry. It is also very popular in cold countries in Europe because it can be stored for a long time during the cold winter months. Even though we don’t get a long and cold winter here in Texas, it is a good option for a filling meal that will make your taste buds and your tummy warm and happy.
The Friday of (2/2/18): Today we will be offering cabbage in the Power Up Café. This hardy and tasty vegetable is a high source of fiber which helps keep us full for longer. We hope you have a nice weekend, but first, make your tummies full and happy with trying our cabbage dish at lunch today.
