May – Bell Peppers

The Friday before (4/27/18): This month we are celebrating bell peppers from our school garden. Bell peppers are part of the nightshade vegetable family. Other vegetables in this group are potatoes, tomatoes, and eggplants.

The Monday of (4/30/18): Bell peppers are a super high source of vitamin C. Can you silently think of what vitamin C may help with? Vitamin C is important for our immune system so we don’t get sick. It also helps keep our skin, hair, nails, teeth, and bones healthy and strong. To keep the most nutrients in bell peppers, it is best to eat it raw. But before taking a bite into a bell pepper, remind your parents to wash the bell pepper under cool water. Then, they can remove the stem and seeded core. Enjoy bell pepper strips with hummus or yogurt dip or plain.
