Food preparation encompasses all of the steps that occur between the acquisition of raw ingredients and their consumption as food. Food choices, such as meal sources and preparation, have a significant impact on dietary intake and health. To obtain quality products, mechanical controls such as accuracy in weights and measures of ingredients and standard recipes are required. Acceptance of a food product by those who consume it is used as a "standard" more often than any other means of measurement in a dining facility.
