INGREDIENTS:
3/4 cups of balsamic vinegar
2 tablespoons of maple syrup
1 tablespoon of Dijon mustard
1 garlic clove, minced
Vegetable oil cooking spray
4 (6-ounce) center-cut salmon fillets
2 tablespoons of olive oil
1 teaspoon of salt
1/2 teaspoon freshly ground black pepper
DIRECTIONS:
Place an oven rack in the center of the oven. Preheat the oven to 400 F
In a small saucepan, bring the vinegar, maple syrup, mustard and garlic to a boil over medium heat. Reduce the heat and simmer until thick, about 12 minutes. Set aside to cool for 5 minutes
Spray a small baking sheet with vegetable oil. Arrange the salmon fillets in a single layer on the prepared baking sheet. Drizzle both sides of the salmon with olive oil and season with salt and pepper. Roast for 8-10 minutes, until the flesh flakes easily when prodded with a fork.
Transfer the salmon to plates and drizzle with the glaze.
