The exterior of Ollette's blends the iconic architectural style of Twilight Town from the Kingdom Hearts series with the iconic style of 80s art deco.At the front of the motel, one may notice the gates are shaped like large keys, and an upside-down heart-shaped window. Heart shapes subtly form a lot of the windows. Sit down at one of the chairs, formed from old motor parts, at the large tables, themed around the ocean. Bric-a-brac from around the world lines the walls. Some of these even relate to the worlds in the Kingdom Hearts series. Sit down patiently to be served your cuisine.

Here is a sampling of Ollete's menu:

“Olette’s Special” : a curry of seafood and mixed vegetables atop a quinoa pilaf.

“Blessing of the Heart” : is especially heart healthy.

“Traverse Town Sliders” : French-inspired sliders.

“Twilight Town Skewers” : Veal meatballs with pineapple and eggplant.

“The Square Dance” : A pasta dish.

“Sanctuary” : Non-alcoholic beverage blend with lime juice and orange juice.

“Dream Eater” : A rum along with grape juice, lime juice, and tomato juice.

“The Door to Darkness” : Whiskey with black currant juice and blackberry juice.

Dessert includes the legendary sea-salt popsicles.

B2. Evangeline

Evangeline will be a Cajun table service serving food inspired by not only New Orleans, but also The Princess and the Frog. Evangeline is said to be a firefly stuck on that big bluish black thing, the second star to the right, and also the queen of the night. Evangeline is not only a star from the Princess and the Frog, but represents the history of Walt Disney Animated films through the eras. This signifies the importance of Evangeline, and how she inspired an entire restaurant. For whenever it's night look up and see how she lights up the sky, ma belle Evangeline.

The restaurant's exterior is designed after the General Laundry building found in New Orleans. The restaurant shares the facade with Bayou Bites, a counter service serving New Orleans street food and other small snacks. Along with The Gator Stomp, a New Orleans Jazz club that harkens back to Art Deco's olden days. Due to this multipurpose building each of the locations will utilize the same kitchen, and have items that are on each other's menu. Evangeline will have a partnership with Fat Tuesday: New Orleans Daiquiri carrying a lite version of its menu for drinks.

Appetizers

- Fried Boudin Balls: Cajun sausage and dirty rice rolled into fried balls.

- Evangeline Shrimp*: Butterflied shrimp baked in our signature Evangeline sauce.

- Stuffed Mushrooms*: Deep fried stuffed mushrooms, stuffed with crabmeat and our signature Evangeline sauce

- Popcorn Shrimp: Bite sized shrimp served with a lemon garlic aioli.

- Calamari: Fried squid served with a lemon garlic aioli.

- Sampler Platter: A platter containing calamari, studded mushrooms, and fried boudin balls.

Entrees

- Papa's Gumbo*: Just like how papa made it, a dark roux based soup with seafood and rice.

- Cluckin' Gumbo: A traditional golden brown roux based soup with chicken, andouille, and rice.

- Catfish Filet: A blackened catfish filet grilled to perfection, and topped with a shrimp etouffee. Served with two sides.

- The Quarter Salad: A blend of iceberg, romaine and red leaf lettuce. Mixed with kale, carrots, tomatoes, cucumbers, red onion, and croutons. Tossed with an Evangeline based ranch. Shrimp, chicken, or catfish can be added for an additional cost.

- The Big Easy: A 1/3 lb Angus Burger topped with caramelized onions, pepper jack cheese, pickles, and our signature Evangeline sauce. Served on a brioche bun.

- Grilled Beef Tenderloin: Beef tenderloin marinated in our signature Evangeline sauce. Served with two sides.

Dessert

- Beignets*: Deep fried dough squares covered in powdered sugar and a honey drizzle. Served with a chocolate dipping sauce.

- Bread Pudding: A bread pudding served with a butter rum sauce and a scoop of vanilla ice cream with a honey drizzle.

- Ice Cream: Two scoops of vanilla or chocolate ice cream with berries and a honey drizzle.

- Kings Cake*: A puff pastry ring filled with cinnamon and chocolate. Topped with purple, green, and yellow powdered sugar. Serves four.

Sides

- Dirty Rice: White rice cooked with green bell pepper, celery, and onion, and spiced with cayenne and black pepper.

- Potato Salad: A potato salad made with egg, celery, onions, mayonnaise, mustard and bell pepper. The egg and mayonnaise can be substituted for a vegan alternative.

- A Drink from The Other Side*: a non-alcoholic Hurricane-like drink garnished with an orange slice and cherry.

- Bayou Slush: Frozen limeade mixed with Sprite and lime sherbet. Garnished with a strawberry.

- Soft Drinks: Coca Cola, Coke Zero, Diet Coke, Cherry Coke, Sprite, Fanta Orange, Hi-C Fruit Punch

- A Drink from The Other Side*: A New Orleans Hurricane made with a Pat O’Brien’s mix garnished with an orange slice and cherry.

- New Orleans Mojito: Key Lime Rum, lime, housemade simple syrup and soda served over fresh mint leaves.

- Louisiana Lemonade: Bayou Satsuma Rum & Citrus Vodka, maraschino cherry juice, pink lemonade, and sour.

- Bayou Juice: Rum, lime juice, simple syrup, and cucumber slices.

- Fat Tuesday Daiquiri Slush: Choose a flavour (Hurricane, Pina Colada or Strawberry)

B3. Bayou Bites

Bayou Bites will be a counter service featuring a slimmer modified menu found at Evangeline. Seating will be limited to an outdoor patio with Spanish moss growing down from the awning encasing guests in a swamp like atmosphere while maintaining the art deco motif present on the building. Overhead fans will continuously cool guests, and hidden speakers play smooth jazz.

B4. Zaroorat Cafe

Named after the Hindi word for "Necessity," the Zaroorat Cafe will bring Indian food to Disney Springs! Guests will be invited to forget about their worries and their strife at this new table service restaurant that perfectly blends fine dining with a relaxed, welcoming attitude. Indian decor, with elements inspired by The Jungle Book, will complete the atmosphere. Wood carvings of characters such as Baloo, Baghera, and Shere Khan will fill the dining rooms.

The signature items of Zaroorat Cafe will be:

Honey Naan Bread: The bees are buzzing in the trees to make honey just for us, and what better way to celebrate than through infused Naan Bread.

Malai Kofta: Veggie meatballs with amazing spices.

Chole: Chickpea Curry

Tandoori Chicken: Indian style Barbecue Chicken

All food is served family style with large portions meant to be shared. Large platters encouraging the family to come together for a joyous, relaxed, and fun experience. Something that celebrates both Indian culture and the laid back attitude of that lovable bear, Baloo.

B5. The Pub Sub Hub: Presented by Publix

Few brands are as quintessentially tied to Florida history (especially the spring/lake towns of central Florida) than Publix Supermarkets. The first store opened in Winter Haven, FL just a 45 minute drive away from Disney Springs. While primarily just a grocery store, there are two things that has set Publix apart from the competition: Excellent, Disney-level customer service and the most delicious subs ever made!

It is not uncommon for Floridians to go to Publix just to get their subs and sweet tea. There has never been a way to get these amazing Pub Subs (as they are affectionately called) outside of the grocery stores... Until now!

The Pub Sub Hub is a new experiment design to take this iconic Floridian food to a whole new audience! Delicous Boar's Head deli meats and cheeses, chicken strips, and sweet tea, all in a new stand alone sub shop! With an exterior modelled after the original Publix supermarket, this new dining location is sure to be a hit! If popular, it could possibly be the first in a chain of stand alone Pub Sub shops as Publix expands as a company nationwide.

The high level of costumer care makes a partnership between Disney and Publix a perfect fit!

B6. Johnny Rocket's

"Nothing was bigger in the 80s than 50s nostalgia" - Bojack Horseman

The chrome, the neon, the fun atmosphere, the music... A 50s throwback diner is a natural fit for the Light's District Expansion! And no throwback diner chain is a better fit for Disney than Johnny Rockets! Just take a look at this quote from their website:

"Johnny Rockets is more than a restaurant, it’s an escape-from-the-ordinary experience that brings every day – and everyone – an excuse to celebrate, making memories and meals that live beyond the booth."

The attitude and core believes of Johnny Rockets, along with their incredible food, will be a great match for Disney Springs! This will also help serve as a reasonably priced option for food that appeals to younger, pickier eaters as well as older, more discerning guests.
