The interactivity refers to the level of student engagement with the technology being used. Overall, technologies that have a high level of interactivity are more engaging for students while technology with a low interactivity are those that have little to no student engagement. This level differs from student to student.
Lower Interactivity:
Reading a text book
Listening to a podcast, lecture, class etc.
Watching a video
All three of these examples pose the student as consuming the material rather than being the creator of new things based on hands on learning experiences.
Higher Interactivity:

Simulation
Data sets
Software/gamification
Interactive apps and videos
All of these examples allow students to consume the material as well as create new material after their learning experiences. This allows the students to make meaning right away of what they have learned.

Through this website students can work through 10 different "models" of science. This website has interactive models for whatever you may be teaching from weather to the human body.
This website while less interactive, gives students access to live webcams of animals and places all over the world. it is well organized into categories and can be used for a variety of different science topics.
On this very interactive website students are able to build and interact with their own dairy farm through a character. This website is more geared towards earth science as it teaches them about fertilization of the land and how to take care of crops.
This very interactive app can be used on either android or apple products. It is a simulation game that allows students to understand the concepts of force and motion on objects. This would be an app best suited for physical science
This website allows students to learn about magnets through game and simulation. This is a very interactive app that allows students to explore magnets in their "playground" using different tools.
