Cattle will hang approximately two weeks until cutting, wrapping, and freezing. The aging of a carcass in this way allows the flavors of the meat to intensify to bring you a greater eating experience.
When ordering a whole beef or a half beef, you can completely customize your order by choosing how you want it cut (thickness of steaks, size of roasts, etc.…). Our quarter beefs now com partially standardized to ease the butchering process. All quarter beefs will have steaks cut 1" thick, and ground beef will come in 1 lb packages. You will have to choose boneless or bone-in for the loin and rib at the time of your preorder. However, the rest is up to you (size of roasts, which cuts you want to receive, etc...). All of our quarter beefs are "split" quarters, meaning you get a little of everything, not just the front or back.
You will be responsible for picking up and transporting your complete order from the processing facility in Stephens City, Virginia. We require a $100, non refundable, deposit per quarter up front when you place your preorder. The remainder of your invoice would be due no later than one week before Rawlings Farm delivers the animal to the processing facility.
The cutting, wrapping, and freezing fees are additional and West Virginia law mandates that the customer must pay this fee directly to the processor when picking up your order.
