This appears to be a number of sprites and textures that would be used in the UI of a Saturn Dreams level or the scoreboard. This includes a few different sets of numbers, the rank icons that appear next to scores, the boss icons (including Selph, Wizeman, and two different question marks), the Ideya Capture overlay during gameplay, and the blue/gold chip display. There is also one "Saturn-style" gameplay hint. Notably, unlike the other Saturn-style hints found in the GAMEUI_HINT files, this one appears slightly squashed and has an image size of 512x512 instead of 512x256. It also contains the larger PS2-style graphics for the boss score multiplier and "New Record". Renaming this file reveals that it is totally unused and does not affect gameplay.
All of the ENDING, GALLERY, and HINT files contain large images that were used in the PS2 Japanese version and go totally unused in the PC version, having been replaced with higher-resolution equivalents in various languages.
These are ending screens that tell you if you have unlocked a reward by completing the game. The first two images are the reward messages themselves, while the last two are the artwork that appear alongside the messages.
This contains two versions of the picture of NiGHTS that appears after the ending sequence. The first one is the PS2 version, while the second appears to be taken from the Saturn version. Both have some padding around the image itself, likely to make the image dimensions be a power of 2. The "Saturn" version seems to have the correct aspect ratio, while the PS2 version, like many of the PS2 graphics, is squashed horizontally.

This is the gallery menu UI for the PS2 version. The PC version is shown on the right for comparison. Note that the icons are roughly the same.
These comprise 153 different images used for the PS2 version's gallery. Most of the images are almost identical to and are arranged in the same order as those in the PC version, but there are some differences. Also, all of these images are squashed to 5/6 of their intended width, something that is common in PS2 leftovers from this game and can be seen in the squares of the gallery UI above. Notably, in both sets of gallery images, there is one duplicated Nightopian artwork (Nightopian images 7 and 14 in the PC version and PS2 files 52 and 59).
Images with order changes:
The Alarm Egg, which is image number 11 of the enemies gallery in the PC version, is image number 60 in the PS2 files, which would place it just after the Nightopian artwork.
The 5th and 6th images of the PC version's merchandise gallery correspond to files number 125 and 126, putting them in the middle of Christmas NiGHTS artwork.
For some reason, Christmas sketch #19 in the PC version seems to have been moved from its position as sketch image 10 in the PS2 files.
The merchandise images from 1 to 4 in the PC gallery are A01-A04 in the PS2 files, placing them almost at the end of the gallery files.
Finally, the magazine scans, which should be two-thirds of the way in the gallery images judging by their gallery icon's position, are found in files B01-B04, presumably placing them at the end.

GAMEUI_HINT files: These are hint screens for the PS2 version. Each file contains a PS2 and a "Saturn" version of each hint. All of the hints are in Japanese, as the PS2 version was only released in Japan. All of these hint graphics go unused in the PC port, having been replaced with higher-quality versions in different languages.

GAMEUI_OPTION.BIN: Contains leftover UI images from the PS2 save select and options screens. Many of these are definitely unused, as the PC version has no save select. Here are just a few of the unused graphics, including some with references to the PlayStation 2 itself.
GAMEUI_PROG.BIN: Seems to have similar contents to GAMEUI_MC.BIN.
GAMEUI_PS2.BIN: Lots of gameplay UI, such as the Ideya Capture HUD sprites, stage names, numbers, and UI graphics that appear when collecting score. Below are some of the graphics associated with gaining score.
GAMEUI_PS2_MARE.BIN: The UI graphics from the boss result screen, including numbers for the score multiplier and other words that appear on the result screen.
GAMEUI_PS2_XMAS.BIN: The UI sprites of the Ideya Tree in Christmas Spring Valley.
