Note: I have not been able to get the bugs out of Saturn Dreams texture ripping, so I will be displaying the Saturn models without textures. Also, since Saturn models are stored in several pieces, I will not be displaying them unless they are relatively easy to put together.
DAT files: These are 3d model data for all characters, including bosses and enemies. They are divided into DAT and DAT SS files, the former with models from Brand New Dreams and the latter containing models from Saturn Dreams. Fascinatingly, almost all of the SS files contain unused early versions of the Brand New Dreams models and textures. The files are as follows:

Contains Clawz model data. The final model is on the left. Some notable differences between the two are that the unused model is divided at the waist into an upper and lower body model, while the final is one piece. Also, there are some holes in the unused model's mesh around the nose. Finally, the overall color scheme is inaccurate compared to the original Saturn version, the most pronounced part of this being unused Clawz' blue rather than yellow eyes. @SparkleWolf404 pointed out that the unused model's colors are similar to this concept art.
Contains Claris' model data in her default costume. The final model is on the left. The final model has a separate hair model and a mask-like model to add different expressions, while the unused one has a separate eyelash model.
This file contains duplicates of DATCLARIS.BIN's hair model and texture.
The models are displayed in order from left to right, top to bottom. Each has slightly different quirks. The new year, winter, and Christmas versions each include a mask-like model to give Claris different facial expressions. The summer model has separate hair, while the winter one has a separate head altogether. Finally, the new year model has a separate skirt. There are no Saturn Dreams equivalents of these costumes.
The models are displayed in order from left to right, top to bottom. Each one comes with a sphere model for when NiGHTS hits them. Each enemy also has a few small objects for its attack animations, aside from Snip which has a chunk of ice almost as big as itself. Crewle & Pole's mesh appears to have holes near Pole's cheeks. Also, Hollow's model is rotated 180 degrees around the Z axis compared to the others, so I turned it around for this screenshot. None of these enemies have SS models.

The models are displayed in order from left to right, top to bottom. Compared to Claris' models, these are put together fairly simply. The New Year, Christmas, and winter models have face "mask" textures for expression, but that's it. There are no Saturn Dreams equivalents of these costumes.
Contains Puffy's model data. The final model is on the left. This seems to be one of the earlier models worked on, as the unused version is noticeably simpler and has a very different style from the final. Other notes: DATFATTY.BIN contains a duplicate of the unused model found in DATFATTY_SS.BIN. The final model has separate objects for Puffy's eyelashes, "belt," and the red gem on the belt, while the unused model is one-piece. Also, the unused model is upside down compared to most Brand New Dreams models, instead matching the orientation of Saturn Dreams models. I turned it over for this image.
Contains Gulpo's model data. Interestingly, DATFISH_SS.BIN has no trace of unused model data.
Contains Gillwing's model data. This time the final model is at the bottom-right. Like Puffy, Gillwing's unused model looks very early and simplistic. This makes sense, as being the first bosses for Elliot and Claris, they would likely have been designed the earliest. The unused model can also be found in DATFROG.BIN, similar to Puffy's situation. Gillwing has some additional oddities, however. First, the unused model found in DATFROG_SS.BIN (bottom-left) is split down the middle, and appears to lack tail segments. The model found in DATFROG.BIN, (top) on the other hand, is now a single object and includes a solid, unsegmented tail that matches the unused texture. However, the unused texture found in both files is identical, suggesting that the tail may have already been completed by the time the developers presumably switched over to working on DATFROG.BIN. The final model has a similar solid tail, but it is split into a front and back half.
Unlike some Christmas files, this one has an underscore between the character name and XMAS. There is no Saturn version of this model. It includes the star on the end of Gillwing's tail as a separate object.
Contains Jackle's model data. The final model is on the left in the first image, and the right in the second. The final model contains an additional cape which is rotated 90 degrees and maps correctly to the unused texture rather than the final. There are a couple of minor differences between the two models, including that the unused one's eyes are not bloodshot and it has a few holes in its head mesh. The major difference is in cape textures. The final texture is a faithful reproduction of the Saturn version's cape, while the unused texture is different altogether, instead matching this concept art, as noted by @SparkleWolf404.
The extra cape is textured using Jackle's final texture in-game, but due to having the prototype cape's texture mapping, it causes the cape to display incorrectly during the boss fight.
Interestingly, the game's hint on defeating Jackle shows the unused cape texture. (Along with several unused tarot cards)
Contain data for normal and Christmas Nightopians, respectively. Both include a second pair of wings and a large number of alternate heads with different face textures to match. DATNIGHTOPIAN.BIN also includes parts specific to the King Pian, including an alternately mapped torso and heads with a crown model rather than a halo.
Contains the unused Halloween Nightopian presumed to have been planned for the scrapped Halloween stage. It has devil horns and tail rather than a halo, and has slightly unfinished-looking bat wings with some leftovers from the normal wing texture. This file does not contain any alternate faces or heads.

Contains NiGHTS' Brand New Dreams model. First of all, credit to @bluwolfboy for ripping the Sega Superstars NiGHTS model. A quick look at DATNIGHTS.BIN and the Sega Superstars NiGHTS model reveals that they are almost identical in appearance. The Sega Superstars model is larger and has a higher poly count, but it's clear that DATNIGHTS.BIN's model was adapted directly from it. The Sega Superstars model is on the left, and DATNIGHTS.BIN on the right in both of the proceeding images.
The textures are practically identical as well, the only noticeable difference being that the Sega Superstars version has higher color depth. Once again, the Superstars version is on the left.
Seeing that NiGHTS' model originates from another game, while the rest appear to be original, one wonders if the developers started out with different plans for NiGHTS...
Contains NiGHTS' data for Saturn Dreams. This is where things start to get very interesting. First, the Saturn models themselves reveal some oddities. Each of NiGHTS' different transformations is represented as one of 12 separate models in this file (these same transformations are also present in shp_nights_ss.bin, which is the file the game actually uses to handle NiGHTS' transformations).
From left to right, top to bottom (also the order that they are stored in the file data), these models appear to be:

Of these, 1, 2, 3, 4, 8, 11, and 12 are clearly used in-game.
9 and 10 look similar to some used models and are possibly used, but I have not been able to definitively observe them in-game. NiGHTS seems to go straight to the legless Drill Dash morph when there is dash meter left and remains in normal form when the dash meter is empty. The sled portion of Frozen Bell is difficult to see in general so I really can't tell if the sled ever becomes flattened.
5, 6, and 7 are probably unused, although a Saturn hint does seem to show NiGHTS with a similar head shape to #5:

Mermaid NiGHTS' tail is made of right leg parts. The left leg disappears. (In contrast, Brand New Dreams NiGHTS' mermaid tail appears to be made of both legs fused together) Also, Mermaid NiGHTS' back fin is a stretched lower torso model.
Drill Dash, on the other hand, uses both legs' thigh and shin pieces, but leaves out the feet. (In contrast, Brand New Dreams NiGHTS has one leg become the Drill Dash tail while the other disappears)
In its native state, model #6's ("Big head" NiGHTS) head model is offset by a significant amount in the -Z direction.
The best part of DATNIGHTS_SS.BIN, however, is an original unused model for Brand New Dreams NiGHTS, complete with a radically different texture from the final:
Sorosal pointed out that this model looks similar to the style of the original Saturn model, rather than following the style used in NiGHTS promo art as the final does. This model has a higher poly count than the final; however, its texture appears somewhat unfinished, lacking a mouth. The texture's layout is very similar to Reala's final and unused textures.
These contain the model data for the second NiGHTS that appears in the boss battle with Wizeman. In addition to the unused model pictured below, DATNIGHTS_SS_B.BIN also contains the normal morph for Saturn Dreams NiGHTS. The only difference between the "B" and normal data is that the B textures have lighter colors.
These each contain just one model -- for Halloween or Christmas NiGHTS, respectively. DATNIGHTSXMAS.BIN also contains a duplicate of the Halloween NiGHTS texture for some reason (it does not map to Christmas NiGHTS' model).
Contains Reala's model data. Unusually, DATREALA_SS.BIN contains an "unused" model identical to the final, but it does not map correctly to the unused texture that comes with it. As @KetrinDarkDragon discovered, however, the texture does map correctly to NiGHTS' unused model, with hysterical results. The final model is on the left. Thanks to KetrinDarkDragon for putting these models together.
Reala's Saturn Dreams models contain an oddity as well, as one of them is clearly a Drill Dash morph. In the Steam remaster Reala does not have a shp file with transformation data, meaning this drill dash morph goes totally unused. Ketrin confirmed that this is also the case in the original Saturn NiD and Christmas NiGHTS. It seems that this is a possible oversight, as Drill Dashing is a primary feature of Reala's boss fight behavior.
The version of Wizeman's model and texture found in DATWIZE_SS.BIN is identical to the one found in DATWIZE.BIN, the latter of which is displayed below.
