In the philosophy of #Macrobiotics, we believe that eating food grown close to the land and the environment we live in allows the body to absorb more easily and return to balance.
For this batch of corn miso, we chose fresh, locally grown corn from #TitiEcoFarm. We chose it not only because of the corn itself, but also because of the way the land is cultivated and the natural vitality of the food.
This miso is specially fermented using brown rice koji and barley koji together.
Different grains of koji bring a richer range of enzymes and flavour layers, creating a taste that is gentle, rounded, and deep.
As the corn ferments,
the starch is slowly transformed by koji into a natural, mild sweetness and warm grain aroma.
This flavour is not added. It is created quietly by time and microorganisms.
Taste profile of Corn Miso is Gentle and mellow, Smooth and easy to enjoy. Naturally slightly sweet.
Very suitable for daily seasoning and plant-based cooking in our tropical climate.
This is a limited edition,because we only produce it when the ingredients and conditions are right.
From soil to fermentation, our role is simply to give time to the microbes and allow food to complete itself.
