All players have access to Model Career from the start. Other Career types can be bought from the construction store, but take up acres and cost money. A lot of players at this time only use the model career, instead opting to keep acres for more stall upgrades.
Personality > Skills > Performance Stats
Horses that do not fit well in Disc or Halter pathways would be better in Careers (like 1 and 2 star horses with poor Breed Standards and Performance Stats)
Careers have no entry fee and a promised profit (though small)
Careers grant horses some leveling points - but this is a more entry level option
Careers can be done 5 times a day per horse, but take 30 minutes each time. I recommend horses that are fully careered are started BEFORE 8pm game time to give you some wiggle room
To Career a horse:
Career horses must have their personality revealed either through foal training or testing at the vet
Horse must have a career set and the career box checked in the horses settings
Have 20%+ energy remaining
The Explore Pathway pertains to the Hoofbeat Plains. Any horse with "Explore" checked off in their settings will appear as an option here. This option doesn't use any specific stats, skills, personality, or look at a horses breed standards. It also doesn't directly net you money like the other pathways can nor does it act as an effective leveling choice for horses you plan to use for breeding in the future. Horses you don't plan on using or selling can make good explore horses and still provide a use.
Exploring uses 2% of a horses energy for every tile they move to
While this pathway is less horse focused, it can still offer fun benefits to the player like progress towards achievements, wild horses and items to sell or use, or quests that can earn a small profit - give you player stats - and level you the player up.
Please note that at this time player levels do not offer bonuses or rewards. The same goes for player stats. Hopefully as the game continues to find its footing these things will be expanded on.

Horses can be injured while exploring. To use them again get them treated at the vet.
Breed Standards > Skills
Horses with good Breed Standards, Skill points, and lower PS are usually better for Halter Shows. (This option is better for 4 + 5 star horses, not really 1 + 2 star horses)
Halter Shows have have an entry fee and no promised profit. Horses that do not place well can actually lose you money.
Halter Shows, even if losing money, can still grant horses a nice chunk of leveling points.
Horses can be entered into 5 halter shows a day and uses 20% horse energy for each show. Halter shows automatically run if they have 20 entries, otherwise they run every day at noon as long as they are at least 24 hours old.
To Halter Show a horse it must:
Be registered into a Breed Registry whether that be Purebred, Dev Added Cross, or a Campaign. Random crossbreeds and grade horses cannot halter show.
Horse must have Halter box checked in the horses settings
Have 20%+ energy remaining
Performance Stats > Good Breed Standards
Horses with high PS (3-4k+) and good breed standards are usually better for Discipline Shows.
Discipline Shows have have an entry fee and no promised profit. Horses that do not place well can actually lose you money.
Discipline Shows, even if losing money, can still grant horses a nice chunk of leveling points. These shows can provide more leveling points then Halters if the horse is in a high enough tier and is placing well.
Horses can be entered into 10 discipline shows a day and uses 10% horse energy for each show. Discipline shows automatically run everyday at 1am, 7am, 1pm, 7pm game time and have no limit to how many horses can be entered.
To Discipline Show a horse it must:
Horse must have a discipline selected and the discipline box checked in the horses settings
Have 10%+ energy remaining
While viewing a specific horse you own from their page you can find 3 buttons to the right of their name (above the horses photo). The right most button that looks like a note with a pencil is their edit button. Clicking this will take you to an edit page where you can update a lot of the horses info, including their working paths. To have a horse selected for a pathway you need to make sure the related box is checked (unchecking a box makes them unusable for that pathway). Pathways like Career and Discipline go a step further and players must have a select type chosen in the related dropdown. Players can have a disc + career or two disc selected.
