Water Buffalo Dairy, a family-owned farm in San Angelo, Texas, is home to the largest herd of water buffalo in the United States. Using proprietary breeding and nutrition techniques, Water Buffalo Dairy is producing an award-winning line of fresh and aged cheeses that are rapidly gaining fans in the American marketplace.
Water Buffalo Dairy's story starts with a family's love of Italian mozzarella and ricotta cheese. After years of enjoying meals made from these cheeses, the owners of Water Buffalo Dairy decided to try to create their own. But when they turned to domestic dairies for guidance, they discovered that water buffalo had never been successfully bred for milk production in this country.

Determined to continue with their project, the owners traveled to Italy to learn from the experts. They visited water buffalo dairies and talked with veterinarians, nutritionists, scientists, cheese makers and farmers about how to breed water buffalo for milk production.
With this knowledge in hand, the owners returned to Texas and began importing water buffalo embryos from Italy. In 1997 they established a new herd of water buffalo at their ranch in San Angelo; today it is the largest herd of dairy water buffalo in North America.

Water buffalo dairy products are becoming increasingly popular in many countries because of their unique health benefits. This type of milk protein has been shown to be easier to digest than the 'A1' type found in cows' milk.
