Ingredients
1. The Meat & Marination:
Meat: 500g Mutton or Beef
GGGC Paste: Ginger, Garlic, Green Chili paste 2 tblspn
Dairy & Acid: Thick yogurt, 1 Lemon (juiced)
Pantry Staples: Tomato paste, Salt to taste
Spices: Yakhni masala, Turmeric (haldi), Coriander (dhaniya) powder, Cumin (jeera) powder, Garam masala, Red chili powder 1 to 2 tspn
Aromatics: Kasuri methi powder, Whole spices (Cardamom/Elaichi, Black pepper, Star anise, Cumin seeds)
2. The Rice & Masala Base:
Rice: 2 cups (soaked for 30 minutes)
Vegetables: Sliced onions, Potatoes (cubed), Tomato pureed or sliced
Fat: Oil for sautéing
Cooking Instructions
Step 1: Pressure Cooking the Yakhni
Marinate: Coat the meat in the GGGC paste, salt, yakhni masala, haldi, dhaniya, jeera, garam masala, red chili powder, kasuri methi, yogurt, lemon juice, and tomato paste. Let it sit for at least 30 minutes if time permits.
Sauté: Heat oil in a pressure cooker. Add the whole spices (elaichi, black pepper, star anise, jeera) and sliced onions.
Seal the Juices: Add the marinated meat. Sauté over medium-high heat until the meat changes color and the oil starts to separate.
Pressure Cook: Add the required amount of water. Close the lid and cook until the meat is fully tender.
Step 2: Preparing the Masala Pot
Fry Potatoes: In a separate large pot, heat oil and add the potatoes with some whole green chilies and whole garlic to give kick.
Season: Add the same set of spices used in the marinade (GGGC paste, salt, yakhni masala, and all powdered spices) along with yogurt, lemon juice, and tomato paste, Fried onions & tomato puree.
Combine: Transfer the cooked meat from the pressure cooker into this pot. Tip: Double-check that the meat is perfectly tender before adding.
Step 3: The Final Simmer
Liquid Ratio: Pour in the remaining yakhni (broth) from the cooker. Add the soaked rice.
Adjust Water: If the liquid doesn't cover the rice by about an inch, add a little more water.
Cook: Cover tightly and cook on low heat for about 30 minutes (Dum) until the rice is fluffy and the water is fully absorbed.
Serving Suggestion
Serve hot with a refreshing Vegetable Raita (yogurt with chopped cucumber, onions, and tomatoes) to balance the warmth of the spices.
