*For the Batter*
Suji / Rava (Semolina): 1 cup (fine variety works best)
Besan (Gram Flour): 1/2 cup
Sour Curd (Khatta Dahi): 1 cup (whisked)
Water: ~1/2 cup (adjust for thick, pouring consistency)
Ginger-Green Chilli Paste: 1 tsp
Turmeric Powder: 1/4 tsp (keep exact to prevent reddish spots from Eno)
Oil: 2 tsp (keeps the dhokla moist inside)
Sugar: 1 tsp
Salt: To taste
Eno Fruit Salt: 1 tsp (unflavored)
*For the Tempering (Tadka)*
Oil: 2 tbsp
Mustard Seeds (Rai): 1 tsp
Sesame Seeds (Til): 1 tsp
Asafoetida (Hing): 1 pinch
Green Chillies: 3–4 (slit lengthwise)
Curry Leaves: 10–12
Garnish: Freshly chopped coriander & freshly grated coconut
*👩🍳 Step-by-Step Instructions
1. Prepare and Rest the Batter
Mix Dry & Wet: In a large bowl, mix 1 cup suji and 1/2 cup besan. Whisk in 1 cup sour curd, 1 tsp sugar, 1/4 tsp turmeric, salt, and 2 tsp oil.
Adjust Water: Gradually add water while stirring to create a smooth, lump-free, medium-thick pouring batter.
Rest: Cover and let it rest for 10–15 minutes so the suji absorbs moisture and swells up properly.
2. Setup the Steamer
Boil Water: Add 2 cups of water to a steamer or deep kadhai. Place a ring/stand inside and bring the water to a rolling boil.
Grease: Grease a high-edged steel tin or dhokla plate thoroughly with oil.
3. Aerate the Batter
Add Spice: Stir the 1 tsp ginger-green chilli paste into the rested batter.
Activate Eno: Add 1 tsp Eno fruit salt directly to the batter, sprinkle 1 tsp water over it to activate, and watch it foam.
Mix Lightly: Gently whisk the batter in one direction for 5–10 seconds until light and frothy. Avoid overmixing to preserve the trapped air.
4. Steam to Perfection
Pour: Immediately pour the frothy batter into the greased tin. (Optional: Dust a pinch of red chilli or black pepper powder on top).
Steam: Place the tin on the stand, cover tightly, and steam on high-medium heat for 12–15 minutes.
Test: Insert a toothpick into the center; if it comes out clean, it’s done. Let it rest for 3–4 minutes out of the steamer.
5. Temper and Serve
Tadka: Heat 2 tbsp oil in a small pan. Add mustard seeds, sesame seeds, hing, green chillies, and curry leaves until sizzling and aromatic.
Finish: Drizzle the hot tempering evenly over the top, garnish with coriander and fresh coconut, then cut into square pieces.
