This is NOT likely something that many of you will need to do. It's likely best if only a few people set up course shells to avoid an abundance of redundant courses.

When a course wraps up, grades will be submitted, but instructors should be encouraged (and program coordinators too, likely) to keep a copy for their own records. This is very simple to do from the grade book. Note: this is also a simple way to keep a record of grades in an ongoing fashion, as opposed to a paper copy or handwritten list of grades.
At times you may need to investigate a student's activity in the course. Provided the course is set up to show the activity log, you can see the date, time, section of the course accessed and the IP address the user was working from. You cannot see what was typed (it is not a keylog, more of a click log!)
