Set your water temperature at 85 degrees Celsius.Prepare your filter paper (by rinsing with hot water) and grind your coffee 34 g.Pour 100g of 85c water for 30 sec.Stir vigorously but carefully with wooden pair of chopsticks for 30 sec.Put the filter cap on, flip the AeroPress and press into a glass server for 30 sec.Do not preheat your serving vessel.Top up your brew with 60g of 85 degrees Celsius water and 40g of room temperature water.

Press the plunge very slowly, aim for a 40 seconds press. This should bring your total extraction to around 90 seconds.

Make cold brew. Depending on your chosen approach, either follow the instructions that came with your toddy or the Cory Doctorow ones. Or open up your store-bought cold brew, you cheater.
Dilute the cold brew if necessary. Cold brew from a toddy or from the Doctorow method is usually diluted 1:1 (or to taste) with water before drinking. That’s what you want. You want to load up a ready-to-serve mix in your siphon. Some store-bought cold brew is pre-diluted, some is not, so check your serving instructions if you went that way.
Fill the soda siphon. Mine is about a liter in capacity, so I put a little less than a liter of diluted-to-taste cold brew mixture into the siphon. Adjust according to your siphon’s size.
Load the charger into the siphon. Follow your siphon’s instructions. You should hear it bubble and you shouldn’t hear too much gas escape if you did it right.
Mix it up. You are looking for the gas to get thoroughly intermixed with the coffee. I usually invert the siphon, then turn it right-side-up again, several times, gently.
Let it sit. Put the siphon in the fridge to allow the mixture to settle and the bubbles to disperse evenly throughout the liquid. If you pour it before it settles enough, it’ll be more of a spray than a pour (foamy). I usually leave it overnight, but I’m not sure if that is overkill.
Pour. Once it has had time to settle, you may pour. Again, this depends on how your siphon works. For mine, I squeeze the lever on the side of the bottle. I recommend a clear-sided glass for best presentation. Bonus points for using an Irish imperial pint glass.
Watch it swirl and settle out. Enjoy!

Place ground coffee beans in the brew filter. For best results, use coarsely ground coffee. The carafe is designed to hold 40 oz. water and 16 tbsp. of coffee with the brew filter in place.
Insert brew filter inside carafe and slowly pour 2 cups of water over coffee to dampen.
Once coffee is damp, slowly fill the remainder of the carafe with water to cover grounds or up to the top of the windows in the brew filter. Be careful not to overfill carafe with water.
Once carafe is full, stir grounds until fully saturated with water.
Tighten lid and place in refrigerator to cold brew for 24 hours. For ultimate flavor extraction, stir grounds during brewing process.
Remove brew filter from carafe. Easily screw off bottom to release used coffee grounds. Always remember to remove filter before pouring coffee.
TO SERVE To enjoy the best cold brew coffee, creamer (or cream substitute), sugar and ice can be added to taste. Cold brew coffee stays fresh in the fridge up to 14 days.
