We recommend keeping the roast light to medium (about 100 to 80 Agtron). This pacamara has clear and clean acidity that is not overbearing with lots of fruit and floral notes that will be muted at darker roasts. Great for an espresso or serving single origin. $8/lb

Sweet fragrance and aroma of cinnamon, nutmeg and vanilla. Deep flavor of dark chocolate, red wine and vanilla with an aftertaste of honey, chocolate malt and baking spices. Medium-bright citric and lactic acidity with a creamy mouthfeel and medium body.
This is a complex cup with a wide range of flavors. The lactic and citric acid is very pleasant at lighter roasts (about 95 to 105 Agtron) while the sweet and spice notes will show strongest in the medium roast range (about 75 to 85 Agtron). $8.12

Floral and strawberry noted in fragrance and aroma. Initial flavors of cherry, strawberry and rose with a sweet honey-like aftertaste. Soft and delicious lactic acidity with a medium-heavy body and silky mouthfeel.
This coffee has a lot of delicate notes that will shine best in the range of light roasts (about 90 to 110 Agtron). Medium roasts will lose much of the floral notes and present a clean and sweet cup. $8.80

Chocolate and green grapes in fragrance and aroma. Notes of chocolate, apricot, and chardonnay with a chamomile, marshmallow, pomegranate and maple syrup. Bright lemon and lime citric acidity with a medium tea-like body.
Armando’s coffee tastes amazing just about every which way. At light roasts those delicate flavors and aftertaste are maintained while at medium roasts the chocolates and dark fruits come forward, still maintaining that buttery mouthfeel. Darker roasts will mute much of the nuance but you are sure for a sweet cup!

Fragrance of lime blossom with a sweet cocoa-like aroma. Notes of peach, white sugar, black tea, white grape, and sugar cane with a unique aftertaste of grapefruit and fresh hops. Complex and delicate citric and malic acidity with lime and green grapes noted. A light-medium body and tea-like mouthfeel bring a delicate character to this washed coffee.
Somewhere between light and medium roast is the sweet spot for this coffee from Guji. The acidity is delicious yet mild. The sweetness is prevalent even in very light roasts. For the full bouquet of notes, try roasting light (about 90-100 Agtron). For more cooked sugary notes, such as caramel, and less tea-like notes, try pushing into medium roast territory (about 80 to 90 Agtron). $8.40

Like many natural processed Brazilian coffee, low and slow is our preferred approach with Luzia. The coffee tastes best when sweetness and body are accentuated by a longer roast with higher end temperatures. We find a solid medium roast to be the perfect fit for this coffee, although we have been enjoying it’s clean and sweet aftertaste on light cupping roasts. Excellent for espresso or adding into blends. $5.24 for blending

This Honduran coffee is straightforward to roast. Average density and moisture content set this up to be fairly predictable. The different varieties are similar enough to roast homogeneously. We love the brown sugar sweetness and other sugary notes in this coffee which are accentuated in the light-medium to medium-dark roast range (about 80 to 65 Agtron). The acidity is mellow, but present on the lighter end of that spectrum so the coffee really allows you to dial in the profile to meet your specific preferences. $6.60/lb
