Caramelised Goodness
Indeed living up to the hype.
The ambience, the views, the decoration, the food.
Situated on 52nd floor of Capital Tower, it takes in the view of both the skyscrapers and defunct container port.
We were given suggestions to order 1 appetizer, 2 small plates, 1 main and 1 sushi roll.
We decided to give the appetizer and main/robata a miss as we were more interested in the small plates.
Appetizers include edamame, tartare, guacamole. Mains include grilled meats and seafood. The menu also have raw seafood, ceviche, claypot dishes, sushi and sashimi.
Crispy Taquitos
Pork smoked aji panca bbq, garlic, pickled cabbage, yukari, aji amarillo
We opted for the crispy taquitos with pork belly, which reminds of Kong ba (扣肉). The caramelised sugar gives it a good burnt sweet taste. I expected something bigger for its price though.
Crispy Octopus
miso kabocha purée, fennel herb salad, chimichurri
Next came the crispy octopus. Our impression was deep fried but the staff informed it would be boiled then pan fried. Presentation wise, it was like how most upmarket restaurant would do. It looked good on the coloured plate with the chimichurri garnishing. Upon biting, you would feel the crispiness more, so it had to do with the miso kabocha purée. It was not bad but I am not a big fan of octopus, and too much for 2 ladies.
Samba Singapore
maine lobster, mango, avocado, soy paper, aji honey truffle
The 3rd dish was Samba Singapore, which was Maine lobster avocado with honey truffle sushi roll. If my friend was not here, I would not have ordered this. I am not a fan of lobster and truffle. I envisioned lobster chunk! I’m a California roll girl haha. But it is silly to order such here. Surprisingly, it was good, the sauce combination, with chopped lobster meat. My friend could not smell or taste the truffle much but I could. I’m sensitive to smell. Nevertheless, it was acceptable to me as I smelt the honey first😆
Asparagus
sweet potato purée, yakiniku sauce, furikake
We both gave this thumbs up. From presentation to taste, it was all excellent. The asparagus is the fattest and juiciest I have seen. I noticed most dishes has signature orange dots as decoration. For this, it was sweet potato puree. So it was a suitable yet sweet twist to the savoury dish.
Samba Singapore
tempura softshell crab, sweet chili, yuzu mayo
The taquito and sushi roll sizes determined we had to order more. We then ordered a Samba Chili crab roll and waygu beef gyoza. I generally won’t order both as I don’t like soft shell crab nor Wagyu🤭 But still decided to try them. The sushi looked good with huge looking legs. It was sweeter than spicy but no taste of chili crab sauce at all. The sushi rice flavour was good though.

Pretty presentation. The beef cubes were soft and easy to chew. Not much marbling, so it was fine for me.
Dancing Passion
Sancho cordial, passion fruit,
ginger, sencha tea
Half the menu was not available and I took the Dancing Passion.
Passable to me but IG worthy.
It came in a transparent glass sake holder where there is a separate compartment for the ice to keep the infusion cold yet not dilute the drink.
Non-Alcoholic Beverages
Being a Brazilian Japanese restaurant, the drinks are extensive. We skipped the alcohol. Under the non-alcoholic list, it has the tall glass and sake glass formats.
My friend had genmaicha and it was not bad.
Pineapple
caramelized baby pineapple, coconut crème brûlée and sorbet
It was save the best for the last when I saw the dessert menu.
The server recommended Manjari chocolate fondant and Japanese doughnut andagi.
My friend saw pineapple on the list and suggested that. I agreed as I like contrasting taste in most of my desserts and some food.
The pineapple looked so grand when presented. It was like a main dish. With all the dry ice and presentation, it is definitely a must order. It was easy to eat as the pineapple has been sliced to cook with caramel. Below it was the coconut creme brûlée which tasted more like custard to me and sorbet.
Japanese Doughnut Andagi

The donuts were good too as its inside were soft with sweet syrup, which I believe is brown sugar.
There are scheduled hourly performance by Samba dancers who danced to loud Samba beats which hyped up the evening, with 360-degree view of central CBD at night.
Would definitely return.
