For those of us new to Team Chick-fil-A Dorchester Rd, welcome! We hope you are learning many new things each shift to better serve our guests and our team!
As one of the cornerstone principles of Chick-fil-A, we are to be good stewards of all that has been entrusted to us. What does that have to do with the food policy? At Chick-fil-A Dorchester Rd. we have tied our food policy to our Positive Food Cost Gap, which then lets us know the dollar amount discount we receive on our employee break meals. What is the Positive Food Cost Gap? It's the opportunity to grow sales that we missed out on due to waste. Examples of waste are making too many strips and the strips getting too old or cold to sell or overportioning desserts (kids cups & milkshakes especially), and overportioning waffle fries. We want our Positive Food Cost Gap to be as small a number as possible
This will fluctuate each month, and we will know what the current month's food allowance will be by the first week of each new month. You will see new postings of the Current Positive Food Cost Gap Number as well as the Food Allowance Amount throughout the Heart of the House. Remember that each of you affects the Positive Food Cost Gap. How? By not ensuring order accuracy (in taking the order or fulfilling the order both on the Front of House side and the Heart of House side) and by wasting product by overportioning or throwing away product that can't be used due to quality.
We want each of you to be talking about how to lower our Positive Food Cost Gap and to take pride in the restaurant as a whole. Remember that we are each here to serve the guest first by providing excellent service and food, and to lead each other in Continuous Improvement.
