INGREDIENTS
1 tablespoon olive oil
1 pound ground Italian Sausage
1/2 medium onion, diced
1 tablespoon minced garlic
2 tablespoons tomato paste
1-28 oz can crushed tomatoes
4 cups low sodium chicken broth
2 tablespoons fresh chopped basil
1 teaspoon salt
1/2 teaspoon pepper
1 9-ounce package refrigerated cheese tortellini
2 cups packed fresh spinach
Place insert in pressure cooker and turn on to sauté, add oil.
Add onion and sauté until soft, then crumble in Italian sausage and brown.
Add garlic and sauté for 1-2 minutes. Then add tomato paste and sauté 2 minutes longer.
Stir in crushed tomatoes, salt, pepper, basil and chicken broth.
Add tortellini, place lid on pressure cooker and set to high pressure for 4 minutes.
When cooking is complete, do a quick release to release pressure.
Return pot to sauté and add spinach and stir until slightly wilted.
Serve with crusty bread and shredded parmesan.
