Pressure Cooker Goulash
Ingredients:
1 lb lean ground beef
1/2 yellow onion, diced
1 green pepper, seeded and diced
3 cloves garlic, minced
1 can diced tomatoes with the juice
4 T tomato paste
1/2 t crushed red pepper flakes
1 t salt
1/2 t ground black pepper
2 t paprika
1, 5.5 oz can tomato juice
3 cups low sodium chicken broth
3 cups Rotini pasta, uncooked
Directions:
1. Turn pressure cooker on to sauté function and let get hot. Make sure insert is in pressure cooker.
2. Spray with non-stick spray, then brown ground beef
3. Add diced onions and green peppers and sauté until softened.
4. Add garlic and sauté 30 seconds longer.
5. Add tomato paste, diced tomatoes, crushed red pepper, salt, pepper and paprika.
6. Pour in tomato juice and stir.
7. Add chicken broth and uncooked pasta.
8. Stir making sure nothing is stuck to the bottom of insert.
9. Lock lid in place, set to sealing and cook at LOW pressure for 5 minutes.
10. When cook time is complete, release pressure using a manual (quick) release.
11. Stir and serve.
Goes great with homemade bread or crusty French bread.
