We till the soil and sow the grain into the earth in spring
With Farmer’s toil With sun and rain the stalks rise up and bring
Fat seeds of barley gold all ripe for harvesting
Barley lets the kettle foam
The stalks are cut, stacked up and threshed, for brewing they do beg
The seeds they soak in water fresh until they grow their legs
Slender rootlets sweet all destined for the keg
Sprouts to let the kettle foam
We’ll sprout, that’s the quickening
Make malt for the sweetening
Get barm for the wakening
The kettle for to foam
So spread the shoots to dry, all sprouting for to halt
Heat it, not too high, keep it turning somersaults
Mind it, by and by, you’ll have yourself some malt
Malt will let the kettle foam
Dip the bucket, build the fire, make the water hot
Grind the malt up coarse, pour it heavy in the pot
Cover it and mash, till a sweet wort you have got
sweetness lets the kettle foam
We’ll sprout, that’s the quickening

Pull the liquor from the grain and separate the two
Wash the malt with water hot, add rinsings to the brew
Strain it all and when it boils, add flavorings in too
Good wort lets the kettle foam
When boil is done our brew it rests, the better to cool down
We add the barm to make it wake and stir it all around
With wooden spoon and secret words we mix the brew so brown
Thick barm lets the kettle foam
We’ll sprout, that’s the quickening

The days go by, the brew it seethes and roils in the cask
Hissing fizz, the wort ferments, the bubbles do their task
transforming it to strong ale we’ll pour into a flask
Changes from the kettle’s foam
Patience for the brew to age, some weeks we now must wait
At last the day arrives to taste the drink that we create
Show now some restraint or it will inebriate
we’ll be tipsy by the kettle’s foam
So sprout, that’s the quickening
