3D food printing

Production of 3D printed medical foods with customized nutritional and sensory attributes


This project is developed in collaboration with the University of Naples Federico II and the Bambino Gesu` Children's Hospital and is funded by a 200 kEuros grant (PRIN project) from the Italian Ministry for University, Education and Research. The aim is to develop 3D printed food products with customized nutritional and sensory attributes to be used as medical foods.

The project objectives are:

- development of inks with specific nutritional content

- understanding the relationship between the physical properties of the material and the printability of the material

- development of 3D food structures with customized nutritional and sensory attributes.
