We study bioreactors with free and immobilized enzymes by using both experimental and modeling approaches. Our interest is in wine treatment, production of sugars and hydrolysis of proteins.
Electrodialysis
We are interested in electrodialysis with monopolar membranes applied to the recovery of fermentation products, food desalting, fruit juice deacidification and peptide separation.
Modeling
We develop empirical, semi-empirical and deterministic models for the description of unit operations and processes of food and biotechnology interest.
3D food printing
We investigate the production of medical foods with customized nutritional and sensory properties by using cold extrusion 3D printing.
Surface tension and contact angle
We are interested in the application of dynamic and optical tensiometers in food and beverages.
