NDFS 1020 (BLS) focuses on the role of food choices in providing nutrients and the effect of dietary behavior on the social, mental, and physical well-being of people. You will learn how to evaluate your personal nutrition status using a computerized diet analysis program called NutritionCalc. This will help you apply the principles we discuss in class. We will study the basic nutrients (carbohydrates, lipids, protein, vitamins, minerals, water) and focus on their chemical structure, digestion, metabolism, physiological function, dietary recommendations, food sources, and deficiency / toxicity symptoms. We will also learn about food safety, food systems, and weight management. This course satisfies requirements for a 3-credit Breadth Life Science (BLS) General Education course at USU and emphasizes math and science concepts.
