There is only 1 ingredient to Maple Syrup - Maple Sap. We just boil it down. The sap has sugar in it already, we do not add anything to it.
Anywhere from 4 hours to 16 hours. That is why pure Maple Syrup is so expensive!
Maple syrup comes in different colours because of cooking and the types of sugars the trees produce (Sucrose vs glucose). As the sugars within the sap cook, some of the sucrose breaks down into glucose, they caramelize (glucose caramelizes more). Usually the longer they cook, the darker the syrup gets. It has nothing to do with final sugar content of the syrup, which is the same range for all Maple Syrup.
