Cucumber roll( Kappa)
Half sheet of nori (seaweed)
2.5 to 2.7 oz of sushi rice
Cucumber sticks
Makisu (bamboo rolling mat) without saran wrap
Sharp knife
Prepare the Rice:
Use slightly less rice than for other rolls (2.5 to 2.7 oz)
Spread rice on half sheet of nori
Shape the Rice:
Use thumbs and fingers to push and elevate rice on the top half by about half an inch
Leave a gap between rice and edge of nori
Spread remaining rice downward
Ensure rice doesn't stick out on edges for a cleaner look
Prepare for Rolling:
Place nori on makisu (bamboo mat without saran wrap)
Leave two bottom bamboo sticks uncovered for easier rolling
Add Filling:
Place cucumber sticks in the center
Be careful not to overcrowd
Rolling Technique:
Hold bottom of mat with thumb
Use other fingers to hold cucumber in place while rolling
Complete one rotation
Lift off mat and give quarter turn onto edge without rice to lock in place
Finishing:
Let roll rest for a few seconds to allow nori to seal
Cut into 6 or 8 pieces

Avocado, cooked asparagus, or other vegetables can substitute for cucumber
