The Caterpillar Roll is an advanced Uramaki (inside-out) roll topped with thin slices of avocado. This guide will walk you through the process of creating this visually striking and delicious sushi roll.
For this demonstration:
Sushi rice
Nori (seaweed sheet)
Shrimp tempura
Asparagus
Carrot
Spicy mayonnaise
Avocado (for topping)
Eel sauce (optional, for drizzling)
Note: Fillings can vary based on preference or restaurant style.
2 Makisu (bamboo rolling mats):
Covered with saran wrap
Uncovered ("naked")
Sharp knife
Saran wrap
Prepare thin avocado slices ahead of time (refer to the avocado preparation lecture for detailed instructions)
Have all other ingredients ready and at hand
Create the Base Roll:
Prepare an Uramaki roll with your chosen fillings (in this case, shrimp tempura, asparagus, carrot, and spicy mayonnaise)
Set the completed roll aside
Add Avocado Topping:
Unwrap pre-cut avocado slices
Flip the avocado slices onto the top of the roll
Ensure the saran wrap is completely open to prevent avocado sticking
Shape the Roll:
Use the uncovered makisu to gently squeeze all sides of the roll
This helps the avocado adhere to the rice
Keep the saran wrap on for cutting
Cutting the Roll:
Cut the roll in half first
Then divide into 8 pieces total
Remove Saran Wrap:
Place the saran-covered makisu over the cut roll
Gently squeeze to reshape
Slowly remove the mat; the saran wrap should peel off with it
Finishing Touch:
Optional: Drizzle eel sauce over the roll for added flavor
Ensure your avocado slices are very thin for the best presentation
The saran wrap should cover the entire roll before cutting
Cutting the roll in half first makes it easier to divide into 8 pieces
The two-makisu technique can be applied to other topped rolls, like the Rainbow Roll
Avocado sticking to saran wrap: Ensure the wrap is completely open when applying avocado
Uneven cuts: Use a sharp knife and practice your cutting technique
Avocado not adhering: Gently squeeze the roll with the uncovered makisu
Remember, mastering the Caterpillar Roll takes practice. Don't be discouraged if your first attempts aren't perfect – each roll is an opportunity to improve your technique!
