My Guacamole

Serves 4-6

3 large ripe avocados (preferably Haas)

1 small red onion, finely chopped

1 jalapeno, seeded and finely chopped

Juice of 2 limes

A BIG handful of fresh cilantro leaves, chopped

1/2 tsp. Kosher salt

Garnish: more chopped cilantro

Tortilla chips, for serving

Extra sliced lime for preserving color.

Peel and pit the avocados. Chop the flesh, place it in a bowl, and mash slightly with a fork. Add the onion, jalapeno, lime juice, cilantro and salt. Mix well. (I use a fork and then a potato masher.)

Serve garnished with cilantro and accompanied by tortilla chips. When storing, cover with thin lime slices and plastic wrap to keep bright green color.
