I am currently accepting new PhD students.
Most of our PhD students come in via the following CDT programmes: D2AIR https://www.cdt-d2air.uk/ and SPADS https://eng.ed.ac.uk/spads-cdt
These allow study of a range of topics in AI, including generative AI, conversational systems, interactive robotics, and so on.
Other routes are available should you have access to other sources of funding.
