Ingredients
3/4c milk
2T white vinegar
1c flour
2T sugar
1t baking powder
1t baking soda
1/2t salt
1 egg
2T melted butter
Strawberries
Honey
Directions
Strawberry Sauce
Wash, hull and chop a handful of strawberries.
Toss them in a food processor with a few drops of honey and blend until smooth.
Put in a container and into the fridge while pancakes are cooking.
Pancakes
In a large bowl mix milk and vinegar and let it sit for 5 minutes.
In another bowl, combine flour, sugar, baking soda, baking powder and salt.
Whisk egg and butter into the milk.
Pour the dry mix into the wet mix and whisk until smooth.
Heat a skillet or griddle to medium heat. Spray with cooking spray and pour batter onto the hot pan using a 1/4 cup measuring spoon.
When bubbles form, flip and cook for 2 more minutes or until cooked through.
Assembly
Using a cooking cutter, cut out a star from each pancake.
Arrange pancakes on plate.
Spoon the strawberry sauce over the pancakes and top with blueberries.
