Ingredients:
7 eggs
1/4 cup half &half
1/2 lb ricotta
1 block pepper jack grated
1 1/2 cups frozen corn
1 1/2 onions chopped
1 clove garlic, pressed or minced (optional)
1 1/2 large red bell peppers, chopped
1/2 bunch spinach, washed and chopped
1/2 cup flour
1/2 tsp salt
Freshly ground black pepper to taste
1/2 tbsp baking powder
Steps:
1. Saute onions and garlic in olive oil until translucent and begin to brown
2. Saute peppers until they just begin to blacken
3. Beat eggs with half & half
4. Mix all ingredients and pour into buttered baking pan (half the size of a lasagna pan)
5. Bake at 375, covered with foil, for 1 hour (cooking time is for a much larger recipe probably closer to 30 to 45 minutes)
6. Remove foil and bake until done about 15 minutes
