Fried Flatbread Pizza Rolls
INGREDIENTS:
1 1/2 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon sugar
1/2 cup water
1 1/2 tablespoons oil, plus extra for oiling bowl
2 ounces shredded cheese
1/2 cup cooked ground beef
1/2 cup pizza sauce
20 pieces (about 1 1/4 ounce) pepperoni slices, rough chopped
marinara or pizza sauce for dipping, optional
INSTRUCTIONS:
To make the flatbread:
- Add flour, salt, sugar, and baking powder in a large mixing bowl. Blend.
- Make a well.
- Add water and oil. Mix with a fork until it comes together.
- Knead by hand in the bowl for one minute until the dough becomes smooth. It should be slightly tacky but not sticky.
- Lightly grease the bowl and dough.
- Shape into a ball.
- Cover with plastic wrap.
- Allow to sit at room temp for 30 minutes.
For the pizza rolls:
- Add 1 1/4-inch of vegetable or canola oil to a pan with deep sides. Preheat to 350° F.
- Divide the dough in half. Keep one covered in the bowl.
- Roll the other half into a rectangle approximately 6-inch x 15-inch and about 1/8-inch thick on a lightly floured surface.
- Place on parchment paper, or lift dough and lightly flour surface underneath. This is to prevent sticking when transferring to hot oil.
- Lightly score (do not cut through) 2-inch wide sections along the length of the dough to used as a visual divider guide.
- In 4 or 5 of the sections, layer hamburger, cheese, sauce, and pepperoni on one side of each section.
- Use a pizza cutter or a sharp knife to slice through and separate the sections.
- Fold the and crimp edges using tines of a fork to close. Transfer to hot oil.
- Cover the unused dough with plastic wrap.
- Fry until golden, flipping over once. There will be a bit of splashing.
- Transfer to a cooling rack.
- Repeat assembling and the remaining frying pizza rolls.
- Repeat rolling out the remaining reserved half of the dough. Assemble and fry as previous.
- Serve with additional pizza sauce or marinara sauce of choice, optional.
Makes about 16 pizza rolls.
