Recipe for Caramelized Candied peanut

However, there is no need to ride. Caramelized peanuts are relatively simple to make at home, as you'll see. To stop burning the sugar as it caramelizes, the only trick to success is to be careful and operate over low heat.
1. Gather all of your ingredients. Aluminum foil or parchment paper can be used for lining a large baking sheet or pan. Remove from the equation.
2. Mix the peanuts, sugar, and water in a heavy-bottomed skillet. Cook, stirring continuously, over medium heat until the mixture thickens into a syrup.
3. Cook, stirring occasionally, for about 10 minutes, or until the liquids have evaporated and the peanuts are coated in a sandy-textured sugar mixture.
4. Reduce the heat to low and continue to swirl while the excess sugar in the pan melts. This is going to take a while. The color of the syrup will change from transparent to golden to amber as it forms. Stir continuously, and be careful not to overheat the syrup to the point that it burns or darkens.
5. Remove the skillet from the heat when the syrup has turned a light-to-medium amber color and the sugary coating on the peanuts.
6. Toss in the peanuts with the salt and orange flower water (if using).
7. Spread the peanuts evenly in a single layer on your prepared pan. Before serving, allow them to cool and harden.
8. Before storing in an airtight bag, make sure the sweet caramelized peanuts have fully cooled. Have fun!
