FreeFileSync is a great open source program to backup your data.  It has a lot of options to filter in or out certain files/directories.  It has a preview of what will and will not be synced and so on.

I like the program so much that I started donating every now and then to the developper of the program so he can continue to add improvements and features to this great application.
