Spinach Cheese Popover
This is based on the German Pancake recipe...
4 eggs
1/2 cup milk
1/2 cup flour
1/4 t. salt
1/4 stick of butter plus butter to sauté the veggies
1 package frozen spinach
garlic powder
1 thinly sliced onion
1 cup grated cheddar cheese
Set oven to 400º. As oven heats, put a ceramic deep dish pie plate or 8-inch square baking pan in the oven with the 1/4 stick of butter. Don't let it burn.
Remove from oven until all ingredients are ready.
Combine eggs, milk, salt and flour in a medium sized bowl. Mix well but don't worry if there are some lumps.
Place frozen spinach in frying pan on low, covered. When melted, stir and turn heat to medium, continue to sauté until dry/done with a pat of butter, a dusting of garlic powder and a pinch of salt.
While the spinach cooks, gently sauté the thinly sliced onion until soft and transparent.
Grate the cheese.
Assemble the dish...
Pour the batter in the pie dish or pan, spoon the warm spinach into the center area of the batter, spreading it out a bit, then top with cheese and the onions.
Bake in oven for about 20 minutes.
