Ingredients:
2 cups butter
2 cups white sugar
1 cup chopped cashews (or any preferred nut)
1 cup milk chocolate chips
1 cup chopped almonds (or any preferred nut)
1/2 cup semi-sweet or dark chocolate chips
1/2 cup white chocolate chips
1-2 teaspoons shortening
Instructions:
Grease a 15 x 10 pan (or cookie sheet with sides) with 1-2 teaspoons of butter. Over medium-low heat, bring sugar and butter to a boil, stirring constantly. Cover and cook for 2-3 minutes. Uncover, cook and stir until candy thermometer reads 300* (hard crack stage) and mixture is golden brown. Add cashew and stir to combine. Pour into prepared pan and spread to edges. Cool for 1-2 minutes. Sprinkle with milk chocolate chips. Let stand 1-2 minutes and spread chocolate over the top. Sprinkle with almonds and press down gently with the back of a spoon. Chill for 10 minutes. In a microwave, melt semi-sweet or dark chocolate chips and stir until smooth. Drizzle over almonds. Refrigerate for 1-2 minutes. Melt white chocolate chips with shortening, stir until smooth. Drizzle over top.
Cover and refrigerate for 1-2 hours. Break into pieces.
