3/25/14 Barb has been crowned the 2014 Cookie Baking Champion for Parkside Retirement Living! She is the Reigning Champion as they have only been doing this for two years and Barb has taken the cake (or the cookie in this case) both years! Congrats Barb! 3/25/14 Barb also gave the presentation for today's meeting about "The Winter of Our Lives". She encouraged us to keep our minds active and not put things off as we don't know what tomorrow brings. Tell our loved ones what we need to. I especially liked the quote, "It's not what you gather, but what you scatter." Here are some of Barb's brain teasers.
1/22/13- Barb has been crowned 2013 Cookie Baking Champion for Parkside Retirement Living. She received a trophy for her culinary talents and her cookies have been named Parkside's Signature Cookie for 2013. Here is Barb's not-so-secret recipe:
Chocolate Orange Macaroons
2 cps (7 oz.) sweetened, shredded coconut
2/3 cup sugar
1/4 cup all-purpose flour
1 tsp minced orange zest
1/8 tsp salt
3 oz. bittersweet chocolate, chopped
2 egg whites
2 Tbsp unsalted butter, melted
1/4 tsp almond extract
Preheat oven to 350 F. Line baking sheets with parchment paper.
Whisk together in a bowl the coconut, sugar, flour, zest and salt.
Fold in the chopped chocolate.
Add in egg whites, butter and almond extract.
Drop tablespoon-sized balls of dough on prepared baking sheets.
Bake macaroons, one baking sheet at a time, until they are firm to the touch and lightly browned on the bottom (20-25 min).
Let cookies cool on baking sheet for 5 minutes; then transfer to a rack to cool.
*Optional: Melt a Hershey's chocolate bar, and drizzle chocolate over the cookies.
6/12/12- We have a wonderful picture of Phyllis receiving her award for 60 years as a P.E.O. Although Phyllis has good days and not-so-good days (don't we all?), this was a great day for her and she was very pleased. It's good to see such a warm smile on your face, Phyllis!
4/10/12 Julie gave her presentation on Cottey College today. Included in the facts about Cottey were some "tasty tidbits" about the famed Cottey College Monster Cookies. We even got to sample some of the wonderful cookies! Here are some excerpts from Julie's program.

10/25/11 Today we traveled to Bev's house in Jefferson City. As always, Bev was the ever-gracious host. After a speedy meeting (the first in a long while), we all traveled to Summit Lake Winery and had lunch. What a treat! Check out more photos in the Pictures Section.
8/9/11 Today was a wonderful trip into the past. We commemorated the 150th anniversary of the Civil War by starting off the day at the Ulysses S. Grant National Historic Site. We heard about the role St. Louis and St. Charles played in the War and then took a tour of the Grant/Dent Homestead and the Presidential museum. Then it was off to the Oakland House Mansion for more incredibly interesting history of the Benoit family and lunch. Check out more pictures on the "Summer Luncheon 2011" page!
4/2011- Our Spring Reciprocity Brunch was held on April 30th at Lindenwood University. It was great to see so many people. Our committee ladies put in a lot of hard work, but it really paid off. It seems everyone enjoyed themselves and had a good time. Below are a couple pictures, but Beth took several more pictures. Check them out in the "Reciprocity Luncheon 2011" tab to the left.
Today, April, 26th, 2011, was a wonderful program. It was given by Patricia and her sister, Marianne, both from Chapter KE, Fulton, MO. We were treated to wonderful stories about their mother, Mabel Nevins Murphy. She learned to quilt when she was 8 years old and didn't stop until she was in her late 80's! Pat and Marianne brought several quilts to show us and I don't think we stopped the Oooh's and Ahhh's for 45 minutes.
Mabel has been featured twice in National Geographic and has been recognized by the Federal Government at a ceremony in Washington D.C. before she passed. Pat and Marianne have also created a recipe book filled with yummy recipes and inspiring stories. Several ladies bought their copy of the recipe book on the spot. If you'd like to purchase a recipe book, you can contact me (through the "Contact Us" tab to the left) and I'll give you Pat's contact information. The recipe books were between $20-$25. There are more pictures in the "Pictures" tab to the left.
Today we had the pleasure of meeting with "Madame Carnac the Magnificent". Carolyn and Judy gave the program after today's meeting concluded. Carolyn, ever the show-woman, slipped into her alter-ego to educate us about Missouri P.E.O. Outreach. Thank you both for a fun, educating experience!
It was another wonderful Christmas brunch and auction at Jean's house this past December. Yet again our amazing sisters stepped up and raised funds for our chosen charity, "First Step Back Home" and for our general fund. Thanks to our BIL Dixi for running the PEO Taxi (see the pic to the right). Check out the other pictures under the picture tab!

August 2010- It's time for our summer social and luncheon. This year the lovely ladies on the planning committee have chosen the theme "Getting To Know You". There are going to be several guests at the luncheon and we are looking forward to meeting them! The luncheon will be held at the Dream House & Tea Room- Claymont Center, 15425 Clayton Road at Kehrs Mill Road in Baldwin, MO. For the program, they've asked us to think about the following questions and share the answers at the luncheon.

4/13/10- We had another wonderful meeting! For those who missed it (or those of us who want to revisit it), Barb gave a wonderful presentation on "The Art of Staying Young". I can't do it justice in this post, but I can reprint some of her points and the reshaped Psalm 23:
"I've learned that regardless of your relationship with your siblings or parents, you'll miss them when they're gone from your life."

2/23/10 - It's been a cold, snowy winter so far unless you're lucky enough to be somewhere warm..... We missed our last meeting because of the weather, but we made up for it today. It was a lovely get-together and Robbie has already given her first program. Wow! We are blessed to have someone like Robbie who is excited and participating already! The plant sale forms were handed out today. We always have such fun with this fundraiser and it always produces such a beautiful result... literally! Marge gave out copies of the official Christmas 2009 picture today. I'm posting a copy in the picture section today. Robbie and Judy did a great job with their presentations and then we had a lively lunch at Culpepper's. I don't think they were ready for such a sharp group of ladies! ;)
1/26/10- What a wonderful day! Please welcome Robbie as our newest Chapter LR sister!! We are so pleased to have her join us. Even after seeing us in all our silliness the first time, Robbie decided we weren't so bad and made it official today. I hope once Robbie gets her feet on the ground she'll be willing to give a program on jewelry making. Robbie, you had the most beautiful necklace on today! When you said you made it yourself I was really intrigued. Just a thought (wink, wink :)).
12/2009 The December Brunch was a GREAT success! The Szoko shuttle brought each one of us to the house where we were greeted by SANTA! Many thanks to Santa (Dave B.) who braved cold, rainy weather outside and then the inside heat when we asked Santa to join us for pictures. As always, the Christmas Brunch team exceeded all our expectations and provided a delicious, and healthy meal. I enjoyed mine so thoroughly I forgot to take a picture of the beautiful plate before I tore into it. Sorry!
When everyone was done, we headed downstairs to start the auction. There were lots of "OOH's and AAH's" and I think the lighted glass display boxes were a huge hit. Of course, we can't forget the yummy cinnamon rolls....
We passed last year's total and had enormous fun doing it. We also raised over $400 for the Sts. Joachim & Ann Food Pantry. Well done, Ladies! Be sure to check out the new pictures in the photo gallery! See everyone (who hasn't flown south for the winter) in January.
11/2009 For our November get-together, we were treated to a performance by one of our sisters, Barb and her violin duet partner Georgia. They performed several beautiful pieces for us- our own private concert! They had quite a range including classical, popular and ragtime among others. They are available for special occasions, small receptions, weddings and dinners. They are called "Interlude- Violin Duets". Their contact number is (636) 441-7561. If you are in need of musical entertainment for a get-together, remember Interlude!
9/2009 In September, Dot and Kendra organized a BIL picnic. Many sisters and their BIL's attended. Much fun was had by all. The "initiation" went well and many new interesting details were revealed about our chapter's BIL's. Thank you to all our "new" BIL's for sharing their great sense of humor with all of us. I'm sure more details and, hopefully, pictures will be forthcoming!
8/2009 In August, several members made a weekend trip to Cottey College and the Lake of the Ozarks. At a recent get-together, those of us who were unable to go to Cottey were able to hear about their experiences as they told us about the campus, the teachers, the students, and even the dorm rooms and the food! The pictures were wonderful and really were worth a thousand words.
