About Schlitz:

The Joseph Schlitz brewing company in Milwaukee Wisconsin. This brewery surpasses, as far as the size of production is concerned, even the Pabst brewery and is not only the largest business in the brewing city of Milwaukee, but the extent of the operation ranks at second place in the United States, directly behind Anheuser Busch in St Louis. As it pertains to export in casks, it is in first place. The current owner of this gigantic establishment are the members of the Uihlein family.

The hop store, equipped with cooling apparatuses, hold circa 5000 bales American and 1000 bales European hops.

Also in this brewery are all barrels, including the trade casks, as well as the large ruh vats, produced in the brewery's own barrel factory. The barrel factory can deliver 500 casks daily. All of the wood is stored for one year prior to use. The bottling department is constructed for the daily filling of half a million bottles. All bottled beer is pasteurized. Apart from adjuncts only American barleys are used, and of that mostly 6 rowed from Wisconsin, Iowa and Minnesota. The sprouting time lasts 7 days, the kilning 36 hours. Here also is anthracite used as fuel for kilning with direct heating.

Most of the beer types are made through the infusion process, certain beers are made also from a mixed infusion and decoction process. Both malt and adjunct beers are made with a concentration of between 12.5 to 16.5% Balling. For the most part American hops from the states of New York, Washington and California are used, apart from this are also European quality hops from Bohemia and Bavaria used.

The fermentation is carried out with propagated yeast, which for several years has taken place in sealed vats, the carbonation is removed and used again for carbonating the lagered beers. The fermentation time lasts for 8 days, the young beer remains afterwards for 2 to 3 months in ruh casks and about 1 month on chips. For lagering they use both enameled steel tanks as well as large shellaced wooden vats. The beers produced are Lager beer, Bock beer, "Atlas beer" in casks and Export, Extra Pale as well as Malt extract in bottles.
