Corn Bread Stuffing
Ingredients
Five slices bacon
Three Tablespoon Butter Olive Oil
One small chopped onion
1/3 c chopped celery
1 1/2 sliced mushrooms
4 cup cornbread stuffing mix
1/3 c snipped parsley
1 c stock
One egg, beaten
Preparation procedure
In a medium pan, fry the bacon to make it crisp. Remove bacon, drain, and crumble, set aside. Over medium heat add olive oil to dip the slices of bacon. Add onion and celery—Cook and stir in 3 minutes. Add mushrooms. Stir it until the vegetables are tender about 2 minutes. Remove from heat. In a medium mixing bowl, combine cornbread stuffing mix, parsley, reserved crumbled bacon and vegetable mixture. Mix well- adds broth and egg. Mix it well in greased casserole; bake the stuffing at 350º for 30 minutes. Uncover and bake after 15minutes and serve it.
Spicy Sausage Dressing
Ingredients
1/4 cup Olive Oil
Five cups cubed French bread
1/2 lb spicy pork sausage
1 Small chopped onion
1/3 c thinly sliced celery
One medium-size chopped apple
1/2 c chopped pecans or walnuts
1/3 c stock
Preparation procedure
Heat olive oil in the skillet and add bread after it heats and stirring to make the oil coat. Stir it over medium flame until the bread cubes get lightly toasted. Add extra oil if needed. Transfer cubes to mixing bowl. Set aside.
In the same skillet, cook sausage and crumble. Add onion, celery. Cook and stir until vegetables are tender and pork is cooked through. Add sausage mixture to the bread. Add apple and pecans. Mix well. Add stock; mix.In greased casserole, bake covered at 350º for 30 minutes. Uncover for additional browning.Twist it by using some roasted Onion and Cilantro or Chipotle oil. As an alternative serving option: Scoop out an apple and serve the cooked dressing in it.
