Careers Working with Children

Prerequisite: A “C” or better in Child Development
Students interested in pursuing a career in child care services, early childhood, or elementary education are encouraged to continue their studies in Careers Working with Children. Classroom instruction will include learning about quality child care programs for young children, licensing and laws pertaining to group child care facilities, child development, guidance practices, planning and implementation of age appropriate activities, curriculum and lesson planning, child care careers, and responsibilities related to the health and safety of children. The course will also include observations and volunteer experiences in a licensed child care facility or volunteer experiences in an elementary aged classroom. Students will also plan, prepare, and implement activities for a student taught preschool experience for local children. Students enrolled in this course will have the opportunity to participate in Educators Rising a Career and Technical Student Organization for future educators.

Child Development

Child Development focuses on the development of the child from birth to school-age. Students will examine the physical, social, emotional, and cognitive development of the infant, toddler, preschooler, and school-age child. Other topics covered include parenting choices and responsibilities, pre-natal care, pregnancy, labor and childbirth. This course is an excellent foundation for students who want to learn about parenting skills as well as students interested in child care, early childhood, elementary education, or other careers working with children.

Creative Sewing

Students will learn basic sewing skills used for project construction and clothing repairs. The opportunity to study elements of fashion design and interior design are also part of the course. Various project options will be given throughout the semester based on student interest. Required projects consist of a pillowcase, pajama pants, fleece project, and a community service project. Students are responsible for purchasing supplies. Students interested in careers related to fashion, retail, or interior design are encouraged to enroll in this course as sewing is life skills as well as a career skill.

Culinary Arts I

This course explores advanced cooking methods and culinary techniques in order to add to your culinary techniques and cooking skills already learned in Food, Society, and Technology. Possible projects are fancy desserts/pastries, homemade breads, gourmet and vegetarian meals, knife skills, soups and sauces, and foods from around the world. This course would be ideal for students interested in pursuing a career in the food or culinary industry. Course content will also allow students exposure to the Servsafe Certification. This is an industry certification from the Restaurant Association and focuses on the development of skills for sanitation and hygiene necessary to meet state codes when working in the foodservice industry.

Food Foundations

Food Science is the study of producing, processing, preparing, evaluating and using food. This course will examine scientific principles related to food and how they can improve the lives of individuals and families. Course content will include physical and chemical principles that affect food through the cooking process and the food we consume. Emphasis will be placed on nutritional analysis, healthy diet and lifestyle considerations, and critical thinking. We will also consider technological advances in the food industry and career opportunities related to food science. This course serves as a 0.5 Science Equivalency credit and a foundation in nutritional concepts for students interested in pursuing careers in the culinary arts, health care, and human service careers.

Intro to Health Careers

Explore careers in all areas of the growing health care field. This course will allow for in-depth career exploration, guest speakers, and a job shadow experience to provide first hand career exposure and prepare students for a future career/higher education goals within the health care field. Health careers discussed will include and are not limited to athletic training, nursing, x-ray tech, dentist, chiropractor, and many more. Students will develop a foundation and understanding of health care systems, facilities, laws and ethics, communication, employability skills, medical terminology, and safety practices that pertain to the health care field.
