Delicious Latkes

Latkes are fried potato pancakes and a well-known Jewish delicacy, traditionally eaten during Hanukkah. They originated from ricotta cheese pancakes fried in olive oil, first made by Jews in Sicily in the 15th century. When Jews migrated to Northern Europe, dairy and olive oil became scarce, so they adapted the recipe by frying grains or vegetables in goose fat. After potatoes were introduced to Europe and became widely grown during crop failures in the 1800s, they replaced flour as a cheaper option. The word latke comes from the Slavic word “oladka,” meaning a small fried pancake.

Yield: 12 latkes
Box grater or food processor, large bowl, large frying pan, wire rack, large spoon
6 potatoes, peeled
1 medium onion, peeled
2 large eggs, beaten
½ cup all-purpose flour
6–8 tbsp vegetable or canola oil
2 tsp kosher salt
½ tsp ground black pepper
Sour cream, applesauce, and dill (optional)
Instructions
Grate the potatoes and onion using a box grater or food processor. Drain and squeeze out excess liquid, then place in a large bowl. Mix in flour, eggs, salt, and pepper.
Heat oil in a skillet over medium-high heat. Spoon the mixture into the pan, flattening each latke. Cook for 3–4 minutes per side until golden brown.
Transfer latkes to a wire rack with paper towels underneath to absorb excess oil. Serve warm, with sour cream or applesauce if desired.

Baked Mac & Cheese: A Classic Comfort Food

Mac and cheese is one of my all-time favorite foods. If you're like me, you probably love comfort in a bowl. This delicious mac and cheese recipe is cheesy, cozy, and easy to make for lunch or dinner. Read on to see what you need and how to make it.
Macaroni:
250g / 8 oz macaroni (elbow pasta)
1 tbsp (15g) unsalted butter
Topping:
2/3 cup panko breadcrumbs
2 tbsp (30g) unsalted butter, melted
1/4 tsp salt
Sauce:
4 tbsp (60g) unsalted butter
1/3 cup flour , plain / all purpose
3 cups milk , warmed (low or full fat)
2 cups freshly shredded cheese, gruyere best (followed by cheddar and Colby)
1 cup freshly shredded mozzarella cheese , or more other cheese of choice
3/4 tsp salt
Seasonings (optional):
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp mustard powder
Pasta:
Cook pasta: Bring a large pot of water to a boil. Add the macaroni and cook per the packet directions, MINUS 1 minute.
Toss in butter: Drain, return pasta to pot, add butter, and toss until melted. Set aside to cool while making the Sauce (Optional – Note 3).
Topping:
Mix together the topping. Set aside.
Sauce:
Preheat oven to 180°C/350°F (all oven types).
Make roux: In a large saucepan or in an ovenproof skillet (I use my 26cm/9" Lodge cast iron skillet), melt butter over medium heat. Add flour and cook, stirring constantly, for 1 minute.
Add milk: Add about 1 cup of the milk and mix to dissolve the paste into the milk. Then add the remaining milk and mix until lump-free (use a whisk if required).
Add Seasonings: Mix in salt and Seasonings if using.
Thicken sauce: Cook, stirring/whisking regularly, for 5-8 minutes until thickened to a cream consistency. When the Sauce coats the back of a wooden spoon, you should be able to draw a path with your finger.
Add cheese: Remove from the stove, add cheese, and stir – cheese doesn't need to melt.
Check the salt: Adjust to taste (if you use the recommended cheeses, you won't need more).

Choco Bliss in a Cup

Craving something sweet and chocolaty? Whip up this easy chocolate milk—perfect hot or cold!
Ingredients:
1 cup milk
3 tablespoons chocolate powder (any kind)
1–2 teaspoons sugar (optional, if your chocolate is bitter)
1 piece of chocolate (optional, for extra richness)
Whipped cream (optional)
Caramel syrup (optional)
Ice (if serving cold)
Instructions:
Mix the milk and chocolate powder together. Add sugar if needed.
For cold chocolate milk: Add ice and stir.
For hot chocolate milk: Heat the mixture on the stove to 150–160°F (65–70°C) for a few minutes, then add a piece of chocolate and stir until melted.
Top with whipped cream if desired.
Drizzle caramel syrup and add a straw if you like.

Sweet BBQ Sandwich: Halal Style 🍗🍔

A sweet and tangy chicken sandwich that everyone can enjoy!
Ingredients:
Halal chicken breast or thighs (minced or fillet)
1 large egg
Bread crumbs (store-bought or homemade)
Flour or mayo (for binding)
Vegetable or cooking oil
Paprika, onion powder, garlic powder, cumin, herbs
Salt (at least 1 tsp) + ½ tsp of any other spices
BBQ sauce
Sweet sauce of your choice
Any sandwich bun you like
Optional toppings: tomato, lettuce, or extra meat
Instructions:
Step 1: Prepare the Chicken
For Fillets: Cut chicken breasts or thighs into sandwich-sized pieces. Marinate in buttermilk mixed with salt, garlic powder, or other spices for at least 2 hours or overnight in the fridge. This keeps the chicken juicy and tender.
For Ground Chicken Patties: Mix minced halal chicken with minced onion, garlic, spices, breadcrumbs, and a beaten egg. Shape into uniform patties, pressing a small indentation in the center for even cooking.
Step 2: Prep the Coating
In one shallow bowl, mix flour, cornstarch, and remaining dry spices (paprika, black pepper, onion powder, etc.).
In a second bowl, whisk together the egg and any leftover milk or marinade.
Step 3: Coat the Chicken
Fillets: Remove chicken from marinade and let excess drip off. Dredge in the flour mixture, dip in the egg wash, then return to the flour mixture for a second coating—this ensures maximum crispness.
Ground Patties: Dip each patty in the egg wash, then coat thoroughly with the breadcrumb/flour mixture.
Step 4: Fry the Chicken
Heat 2 inches of oil in a Dutch oven or deep pot to 350–375°F (175–190°C).
Carefully place chicken or patties in small batches, making sure they don’t touch.
Fry 4–7 minutes, flipping if needed, until golden brown and the internal temperature reaches 165°F (75°C).
Remove and drain on a wire rack or paper towel-lined plate.
Step 5: Assemble the Sandwich
Place the fried chicken on your chosen bun.
In a small bowl, mix BBQ sauce with your sweet sauce and spread generously over the chicken.
Add optional toppings like tomato, lettuce, or extra meat.
