Nic Shapland


Faculty Manager for Hospitality and Catering

As Faculty Manager for Hospitality and Catering, I have the great pleasure each year of welcoming new students.

My subject specialisms include event management, theme design planning, food and wine matching and customer service.

Georgina Perrin

I have worked within the hospitality and catering industry for the past 16 years and have been working within the college Hospitality and Catering Department for the past 12 years; both supporting and teaching food and beverage skills. I enjoy teaching the variety of skills required for the restaurant from barista to flambé and enjoy seeing students develop during their time at Petroc.


Rachael Otani


Level 2 Programme Manager

Before joining the Hospitality and Catering team at Petroc, I worked for 12 years in the catering industry as a hotel manager and receptionist. I have experience of working within all front of house departments and enjoy managing large events.

Organising educational visits to fine dining restaurants, luxury hotels and breweries is a very enjoyable aspect of my job. I feel it is very important for students to see the skills and knowledge they gain at college used in industry.


Tom Lewis


Chef Lecturer

With over 20 years experience as a professional chef and lecturer, I have a deep passion for for all aspects of professional cookery especially fish, meat and sauce cookery.

Passing on this experience to learners and helping them develop new skills and knowledge make my job a pleasure. The highlights of my teaching at Petroc include helping students to win internationally recognised competitions, progress to university and taking careers in world class and Michelin starred hotels and restaurants.

John Gavin


Chef Lecturer

I have over 25 years’ experience as a professional chef; I enjoy all aspects of cookery but I have a particular passion and expertise for patisserie and confectionary. During my time at Petroc I have also developed a very keen interest in Asian cookery and enjoy discovering new ingredients and recipes. Undertaking professional development forms a large part of my teaching role – discovering new techniques and keeping up with trends is extremely important to teaching.

Richard Hands

Apprenticeship Programme Manager

richard.hands@petroc.ac.uk

With nearly 30 years’ experience within hospitality; working as a chef in hotels, public houses, golf clubs and cooking for nobility with the occasional royal visitor I have a passion to share my knowledge and experiences with the up and coming chefs of the future.

Having catered for large banquets to select bespoke intimate dining experiences I have a traditional classical French food background but love to discover new techniques and am always keen to be educated myself.
