INGREDIENTS:
1.2 pounds beef or lamb, cut into bite-sized pieces
2.1 large red onion sliced thin
3.1/4 cup vegetable oil or Ethiopian spiced butter
4.1 teaspoon salt
5.½ or 1 teaspoon black pepper
6.1 or 2 garlic cloves, finely chopped
7.1/2 teaspoon ground ginger
8.2 tomatoes, cut into bits
9.1 to 2 jalapenos, deseeded and sliced (add more jalapenos or don’t remove the seeds for extra spicy)
10.2 sprigs fresh rosemary (can use dried rosemary as well)
Instructions:
1.In a nonstick skillet heat oil over high heat. When the oil easily slides across the pan, add the onions, garlic and garlic.
§Cook for about 4 minutes until the onions become translucent. Stir often so the garlic doesn’t burn.
2.Add tomatoes and cook for another 3 minutes, stirring occasionally.
3.Add beef and mix well until the meat cubes are well coated with gravy.
§Reduce the heat to medium and cook for 15-20 minutes or until the meat is well cooked.
4.Add salt, black pepper, jalapenos, and rosemary.
§Give it a last stir and let it cook for 3 more minutes. Taste and adjust seasoning.
5.Serve beef Tibs with bread or tortilla.
If you can buy it from Ethiopian grocery stores, it is best served on Injera (Ethiopian flat bread).

•A sour flatbread called Injera is used to scoop up meat and vegetable stews.
•Injera is made with a tiny round grain called Teff that flourishes in the highlands of Ethiopia.

The legend of the ark of the covenant
•The Ark of the Covenant also known as the Ark of God, is a gold-covered wooden chest with lid cover described in the Book of Exodus as containing the two stone tablets of the Ten Commandments.
•According to Ethiopian tradition, the Ark of the Covenant is preserved in the ancient holy city of Aksum (in Ethiopia).
•The relic is entrusted to a single guardian, who burns incense before it and recites the Biblical Book of Psalms. No one else can approach it, including the high priest of Aksum.
•The guardian is not only a monk, but a virgin as well, and he serves the Ark until he appoints a successor as his own death approaches.
