Issue: After waiting for my first feijoa to drop and then getting very excited when it did 5 weeks ago I am now inundated with feijoas, and I haven't been able to drop them off to my friends.
Brief: You need to help me out by sending me some of your favourite feijoa recipes. You can also make some of the ones that I have made and put up.
Specifications:
You (or your whanau) need to have made your recipe - it doesn't need to be this season.
Milk - cows, almond, coconut, soy, rice
Feijoas
Banana - frozen or fresh
2 T yoghurt (optional)
2 T rolled oats
Put all together in a blender/nutri bullet.
Place these ingredients in a food processor and mix until smooth.
½ c milk
2 eggs
1 ¼ c white sugar
1 c mashed feijoas
1 tspn vanilla essence
75 g butter
Into a bowl put
2 c flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
Pour the processor contents into a bowl with the remaining ingredients and mix well.
Pour into a well-greased or baking paper-lined 20-23 cm cake tin.
Bake for 40-45 minutes at 180 degrees C. - remember to out the cake on the middle rack.
Lemon Butter Icing
2 c icing sugar (powdered)
grated rind and juice of 1 lemon
25 g butter, melted
Mix all ingredients together until smooth.
Add extra lemon juice if required to make a fluffy buttery consistency.
4 apples 1/2 cup plain flour
1/3 cup water 1 & 1/2 cups rolled oats
2 T lemon juice 1 & 1/2 t cinnamon
3 T sugar 1/2 cup sugar
Pinch of salt 3 T coconut thread
2 cups feijoa pulp 150 g cold butter
Method
Peel and cut the apple into thick slices and put into a medium-sized saucepan.
Add water, lemon juice, sugar and a pinch of salt, cover and bring to the boil. Turn down to a simmer and cook for a couple of minutes.(you don’t want them to be too soft as they will cook more in oven).
Add scooped feijoa to the saucepan, stir then cover and cook for a further 2 minutes until lightly poached.
In a deep bowl mix together flour, oats, sugar and cinnamon. Rub in the butter until the mixture is like breadcrumbs. (Try grating the cold butter into mixture)
Transfer the fruit to a greased ovenproof dish. The fruit should fill three quarters of the dish. Sprinkle crumble over the top of the fruit.
Bake in a preheated oven at 180°C for 20-25 minutes until the crumble is cooked and fruit juices start to bubble up through the crumble.
Enjoy with fresh cream, custard or ice cream.
Ingredients
3 cups flour
2 T baking powder
1 cup caster sugar (you can use normal sugar)
3 eggs
1 1/4 cups milk
1 cup finely chopped feijoas
125 grams melted butter
Method
Preheat oven bake 220 degrees Celsius.
Sift flour, baking powder and sugar into large bowl. Make a well in the middle.
In a jug mix together the eggs, and.milk. Add the fejoas.
Stir in to the dry ingredients.
Add the melted butter and fold in (fold it gently and please don’t over mix).
Spray 12 muffin tins.
Fill muffin tins 3/4 full.
Bake in middle of oven for 15-20 minutes (until when touched lightly with finger they spring back)
Glaze
2 T sugar
2 T Orange juice
Grated rind and juice of 1 lime
Once muffins are cooked brush over the glaze and ket rest for 5minutes before removing from tins.
